Abstract: The objective of this study was to construct food consciousness scale in a sample of Japanese mothers who brought their children lived in Tokyo. Exploratory factor analysis( EFA) was used to identify what factor structure best fit our sample of mothers. The EFA suggested that the food consciousness was best understood as a four-factor model. Furthermore, the four-factor structure of the food consciousness scale(FCS) was supported by a confirmatory factor analysis (CFA):(a)making meals based on mothers’ intentions( 6 items);(b) meals focused on food information( 4 items);( c)meals required by children(4 items); and( d) neglect of food(4 items).The CFA of these factors showed sufficient fitness. The reliability of the each factor was examined by measures of internal consistency and was found to be high. Taken as a whole, these results suggest that the FCS is a robust measure of the food consciousness in mothers and should be considered a viable measure in future research and applied settings.
